News

So most of you already know...but I am pregnant.  We found out this last week.  The guess date is 10/30/10!  So hopefully the baby will stick to my plans and come sometime in October that way I'll have a kid born 6/06, 8/08 and 10/10!  Other than that I'm feeling quite well.  A little bit of nausea but nothing compared to my second but that could change any moment!  I have quite a bit of energy and am taking advantage of it by getting as much stuff done as possible.

On another note of pregnancy...I'm glad to be pregnant again.  I've been blessed and am truly grateful for these blessings.  Also my heart grieves for my friends who are having troubles or are not able to get pregnant.  They are some of the best people in the world and I pray that one day they will get to have this experience.  I don't take my pregnancies lightly as 4 years ago I was diagnosed with endometriosis and a hydrosalpinx (clogged tube).  When you have a hydrosalpinx, the fluid from the tube will often wash away the embryo and so I consider myself very fortunate that I have only had to endure one miscarriage.

I also plan to do some things differently in this pregnancy.  I'm going to try more of a fruit and vegetable diet with lots of whole grains.  Soda is my vice so I'm trying to wean myself and will not buy anymore soda at the store except for Ginger Ale.  We are also opting for a homebirth this time and I'm excited for that time to come.  I'm ready to let my body do what it knows how to do to its deepest core.  I'll keep this blog updated with everything that this pregnancy entails.  We are not finding out the sex of the child so it'll be a surprise the day he/she is born.  So any name suggestions would be welcomed with open arms.

Just some ramblings!

So I'm sitting here at 11:16 at night!  Why?  I'm usually in bed by 10 at the latest!  I'm so tired yet the thought of sleeping sounds so depressing.  I just want to play around with my Cricut and enjoy the wonders that come from it yet...it is time consuming and it hurts my back and neck sitting at the crappy card table and crappy chair!  So here I am.  I ate 3 reeses peanut butter cups today...not all at once...but spread out.  And now I have heartburn.  Not bad but enough to say "Hey I'm here"!  Ugh!  The first time I had heartburn was when I was pregnant with Landon in my third trimester!  It sucked!  I've become a Tums popper.  They are my friends!  Anyways.....I want to sew as well.  I want to make more baby stuff but since we are not pregnant yet I don't see the need...or is it feel the need?  Hmmm.  I want to take some pictures.  I've so missed my camera and taking pictures.  There is just not enough time in the world.  I love school but I don't like doing all the homework sometimes.  Ok that's enough!  I'm tired. Going to bed.

Black Bean and Turkey Chili

1 lb ground Turkey
1 T olive oil
1 large onion finely chopped
1 green bell pepper chopped
1 T Cumin
1 T Chili Powder
3 cloves of garlic minced
1 can chipotle peppers in adobo sauce (found in the mexican aisle) (I used just three peppers from the can since it can get spicy)
4 cans (15 oz each) black beans, rinsed and drained
1 can (15 oz) corn kernals
1 can (15 oz) diced tomatoes
1 can (12 oz) tomato paste and 3 cans of water
salt and pepper to taste

1.  Brown turkey in olive oil.  Add onions and bell peppers and gook until slightly soft.  Add cumin, chili powder and garlic.  Stir for 1 minute.

2.  Add in chipotle peppers, black beans, corn, tomatoes, tomato paste and water.  Stir until paste is desolved.  Bring to boil and add salt and pepper.

3.  Add more cumin and/or chili powder to liking.  Serve with raw onions and sour cream or in a bread bowl.

*For an all vegetarian chili substitute firm Tofu for the Turkey and add it in when you stir in the beans*

We had this for dinner last night and my youngest had two bowls.  It was so good!  Sorry I don't have any pictures.
