Black Bean and Turkey Chili

1 lb ground Turkey
1 T olive oil
1 large onion finely chopped
1 green bell pepper chopped
1 T Cumin
1 T Chili Powder
3 cloves of garlic minced
1 can chipotle peppers in adobo sauce (found in the mexican aisle) (I used just three peppers from the can since it can get spicy)
4 cans (15 oz each) black beans, rinsed and drained
1 can (15 oz) corn kernals
1 can (15 oz) diced tomatoes
1 can (12 oz) tomato paste and 3 cans of water
salt and pepper to taste

1.  Brown turkey in olive oil.  Add onions and bell peppers and gook until slightly soft.  Add cumin, chili powder and garlic.  Stir for 1 minute.

2.  Add in chipotle peppers, black beans, corn, tomatoes, tomato paste and water.  Stir until paste is desolved.  Bring to boil and add salt and pepper.

3.  Add more cumin and/or chili powder to liking.  Serve with raw onions and sour cream or in a bread bowl.

*For an all vegetarian chili substitute firm Tofu for the Turkey and add it in when you stir in the beans*

We had this for dinner last night and my youngest had two bowls.  It was so good!  Sorry I don't have any pictures.
